Blogmas Day 12 - Chia Chocolate Spiced Pudding

Anyone who watches Suburgatory on E4 and wanted to know what on earth the chia thing was that Alicia Silverstone had for breakfast,  then this is the post for you.

According to Wikipedia Chia is - Salvia hispanica, commonly known as chia, is a species of flowering plant in the mint family, Lamiaceae, native to central and southern Mexico and Guatemala.

This is a recipe I have taken and adapted from Oh She Glows.  It is supper satisfying when it comes to managing those chocolate cravings.  I also think it is pretty healthy as far as puddings go too.

What do I need ?

1 to 1 & 1/4 cups of Almond Milk (or any kind of milk will work)
1/4 cup of Chia Seeds (You can get these in Holland and Barrett in the UK)
1 heaped Tbs coco
1 tbsp Maple Syrup
1 tsp Cinnamon
1/2 tsp Ginger

What do I need to do?

1.  In a medium bowl add all the dry ingredients and mix them up
2. Add 1 cup of milk (Save the rest for later)
3. Give it all a good wisk to make sure it is all mixed in.
4. Cover and store in the fridge for about 2hrs or over night.

5. Take out of the fridge and add enough milk till you are happy with the consistency.  I like mine more of a yoghurt thickness.

Enjoy cold or you can heat it in the microwave.
