To be honest this is something I have only done a few times before. I
am by no means an expert and I am sure others will have better ways of
doing this. But this is what I do and it works for me. Some people like to trim the top off but I never bother as it just seems like more work to me and as my cakes are for friends and family I think a little rustic charm helps with the whole homemade thing!
1. Clean and dry your work surface.
2. Cover work surface with icing sugar.
3. Squish marzipan into a ball working like play dough till it becomes supple.
4. Roll out to a little bigger then the size (including edges) of your cake.
5. Coat your cake in jam. (many people say to use apricot jam but any works well I used plum)
6. Lay the marzipan over the cake.
7. Cut out little triangles at the corners so the marzipan sticks smoothly.
8. Smooth marzipan down with your hands. You can be a little firm to ensure it is stuck well.
9. Trim off the edges & smooth. ( If you are covering with icing don't worry about a few little cracks as once the icing is on you will never be able to tell.
